Dive into the flavours of South India!
South Indian delicacies are not just restricted to the area, but, are loved pan India. This cuisine is an amalgamation of flavours, textures, cooking styles and aromas from various states from the southern part of India. Though the dishes might be similar in using key ingredients like coconut oil, curry leaves, mustard seeds and red chillies, still the food from all these places is unique.
But you do not need to head down to the South to get that unique experience; instead you can experiment with it at your home. I’ve listed some of the traditional dishes of this lovely cuisine for a delicious South Indian journey!
1. Neer Dosa
Move over the usual masala dosas and appams and make way for neer dosas instead. The thin watery batter that goes into preparing this flimsy paper like, melt-in-the-mouth dosa probably gives it its name. Best paired with delicious Mangalorean gassi or spicy coconut chutney, you can give the sambhar a miss with this one!
2. Mysore Pak
Arguably this is the best sweetmeat of Karnataka. Made with gram flour, sugar and oodles of ghee – Mysore pak can be made in two varieties. A soft one that requires no chewing at all – it just dissolves as it hits your tongue. The other variety is hard and has a porous, crumbly texture – and just as tasty as the soft one. This is my favourite version, give it a try!
3. MuttonStew
If there is something that tastes great with the light fluffy Kerala appams, then it has got to be a hearty Kerala stew. Chunks of seared mutton, cooked in a creamy coconut milk based rich stew that is loaded with vegetables; a Kerala style stew spells comfort food. You can eat this with just about anything – bread, appams, dosa, rice, chapatis, idlis, iddiappams or even have it just like that on a cold winter evening!
4. PalPayasam
If you are celebrating an occasion in South India and don’t have this delicious rice and milk kheer on the menu, you are not doing it right. Luscious and sweet, this creamy kheer is further enriched with a crunch of cashewnuts and raisins fried in ghee. If you want to add a twist of taste to this fabulous recipe, drizzle with your choice of fruit crush or fresh fruit puree before serving!
Fish is an absolute favourite with South Indians. There are a lot of decadent fish recipes in this cuisine but the most popular is the Chettinad style fish fry. It makes for the perfect snack/starter in any season. Loaded with flavours, this fish fry with aromatic spices is a winner. You’ve got to try it in your kitchen soon!
If you’re a true blue foodie, you will know that Malabar is famous for its chicken biryani and paranthas. A Malabari parantha is not like a stuffed parantha but is more of a lachcha parantha. Perfecting the layers of this yummy Kerala porotha, as it is commonly known is not child’s play, but is definitely worth the effort. You will know what we mean when you have a bite of this crispy bread dunked in some luscious chicken curry or vegetable korma.
