We all love desserts, isn’t it? And there are so many varieties to it that we cannot resist. One of which is the cake. The history of cake dates back to ancient times, where the initial and first cake forms were quite different from what we have in today’s times. They appeared to be more like bread and were sweetened with honey. Quite often, these cakes were topped with nuts and dried fruits. The word ‘cake’ was coined from the Middle English ‘kake’ in the 13th century. Eventually, with the passing time, it’s meaning changed. A comparatively small flattened sort of bread, round, oval or otherwise regularly shaped, and usually baked hard on both sides by being turned during the process.

In the mid 17th century the precursors of modern cakes were first baked in Europe. They were round in shape and had icing on them. This was possible as there were technological advancements with the availability of reliable ovens, food moulds and requisite ingredients. Today, as we know the modern cake, especially the layered ones, normally contain a combination of flour, sugar, eggs, and butter/oil, milk/water and leavening agents, etc. The flavourful ingredients viz. fruit purees, nuts, dried fruits are added to enhance the texture and taste. To make it all the more endearing, cakes are often stuffed with fruit preserves/sauces, topped with a variety of frostings and adorned with various edible garnishes.

a)    In Roman times, eggs and butter were often added to basic bread to give it a cake-like consistency. Therefore, the distinction between Roman cake concepts and bread was very blurred.
b)      The first birthday cake in 1785 was given as an offering on a person’s birthday.
c)      In England during the 17th century, people believed that keeping fruit cakes under the pillow of an unmarried person will give them sweet dreams of their fiancee.
d)      Indonesia baked the world’s tallest cake for their annual Christmas celebration, which stood 108 feet and  3 inches high.
e)      Interestingly, fruit cakes and gingerbread that were made by the Medieval European bakers could last for many months altogether.
